The best of the famous edible mushrooms. It is found throughout Ukraine. Grows in deciduous (under oak, beech, hornbeam, birch, hazel) and coniferous (pine, spruce) forests.
It happens to be both scaly, often with a cap smaller than the leg, and ratty, with a cap four times larger than the leg.
Collected in June — October.
They are used fresh, they are dried, salted, marinated in reserve. Harvested in Prykarpattia and Polish.
Raw mushrooms contain proteins and other nitrogen-containing substances (5.39%), fats (0.40%), sugars and other carbohydrates (2.72%), fibrin (1 ,01 %), alkaloid hercynine (also characteristic of table beets), ash (0,95 %), aromatic substances, etc.
Used for angina pectoris, tuberculosis, reduction of general tone, against tumors. In folk medicine, frostbitten body parts are lubricated with an extract from the fruit bodies of the white mushroom to speed up their healing.
